Born in 1975, he wanted to become a robin hood at age 6. A sports fencer for 20 years, he has been working with medieval fighting techniques, especially sword fencing, for several years. The sport combined with his professional aspirations at the time led him to a deep preoccupation with the subject of the Middle Ages. As a hunter looking for fresh meat and natural ingredients, it made sense to explore the Middle Ages by enjoying food and drink.
