Since the 1980s, the supply of authentic old sherry casks has largely been depleted due to reuse by sherry makers themselves, leaving whisky distilleries typically left with only the simplest industrial compromise. Authentic old sherry casks are rare and valuable.\u003cbr\u003e That's why Sherishòr has taken the opposite route to achieve the unmistakable and nuanced flavor.
